This is taken @ the Tofu Festival in downtown L.A. Little Tokyo, the 12th Tofu Festival.

These are all done by hand. during my childhood, I have seen these made in the village factory. which may employ from 20 people to 200 people.

Sometime ago I visited one of the factory in China. I am informed that the factory there hire 5,000 people to work in the factory.

Can you imaging the scale of workforce they employ now??
